Sherry Tomatoes and Fermented Garlic

Facts

Fermentation is a process that involves the breakdown of carbs by bacteria into alcohol or acids. The alcohol or acids are a natural preservative, giving fermented foods a distinct zest or tartness. Fermentation promotes the growth of beneficial gut bacteria and play a significant role in supporting immune function as well as digestive and heart health.

Yield: 2 Cups

Ingredients

1.5 Cups Tomatoes, Halved or Quartered – depending on size

1 Tablespoon of Fermented Garlic (Link to this Recipe)

2 oz Organic Extra Virgin Olive Oil

 1 oz Organic Sherry Vinegar

Salt to Taste

Method

  1. Combine all of the ingredients until well incorporated.

  2. Store in an air tight container and allow to marinade overnight.

  3. You will be able to keep these tomatoes for at least a week. They get better over time and you will be ready to make another batch before you run out! 

Helpful Tips and Notes – I hope this one becomes a staple in your home during tomato season!

  • Enjoy these marinated tomatoes with just about anything! Any meat off of the grill would stand up nicely to the acidic yet refreshing tomatoes. I recommend something with a decent fat content like a Rib Eye or Chicken Thigh for the acid to cut through. Another application could be a fresh salsa for tacos!
