Prep Time: 5 minutes

Cook Time: 10 minutes

Yield: 1.5 Quarts

Ingredients:

1.5 Quarts Bone Broth – I used both Chicken and Beef

*House-made, see our recipe in the Broths Section!

½ Medium Yellow Onion, Medium Dice

½ Cup Celery

2 Fresh Bay Leaves

2 Tablespoons Bacon Fat

½ Cup Gluten Free AP Flour (I use Cup 4 Cup – developed by Thomas Keller’s Pastry Team)

½ Bunch Fresh Thyme, Whole

½ Tablespoon Salt

Method:

  1. In a large skillet, heat up the bacon fat. Saute the Onions and Celery with Bay Leaf and Thyme until the edges of the Onion begin to brown.

  2. Sprinkle in the flour and stir until well combined, creating a roux – the pan should be relatively dry.

  3. Stir for 2-3 minutes, toasting the flour, which creates a more nutty, bold flavor and won’t taste powdery.

  4. Add in the Bone Broth and bring to a simmer, stirring consistently.

  5. Cook until the gravy has thickened – about 10 minutes.

  6. You can strain the gravy if you choose, the texture of this bone broth is very velvety in texture because of all of the collagen.

  7. Cool and store under refrigeration. Freeze this gravy if you don’t plan on using it all!
