Ground Beef Shepherd’s Pie

For families looking to get ahead for busy weeks, recipes using Grass-Fed Ground Beef can be prepared and stored in batches in the freezer for quick meals. Best, it does not get dry or compromise flavor by freezing. I recommend storing with as little air as possible to avoid ice crystals from forming. Recently I picked up 5# in bulk and plan on making three different dishes beginning with this classic Shepherd’s Pie.

Prep Time: 15 minutes

Cook Time: 1 hour – Don’t forget to put your potatoes on first

Ingredients: 

2# Markegard Family Grass-Fed Ground Beef 

1 Large Yellow Onion, Medium Dice

½ Cup Celery, Medium Dice

½ Cup Carrot, Medium Dice

½ Cup Peas

1 Tablespoon Garlic, Chopped

1 Fresh Bay Leaf

½ Bunch Fresh Thyme, Chopped Fine

1 ½ Cups Beef Bone Broth

2 Tablespoons Extra Virgin Olive Oil

2 Tablespoons Tomato Paste

1 Tablespoon Worcestershire Sauce

½ teaspoon Black Ground Pepper

Salt to Taste

Mashed Potatoes – Everyone makes em’ different, make your favorite version to top this dish! 

Method: 

  1. In a large pan, with Extra Virgin Olive Oil, add the Diced Yellow Onion and Bay Leaf and cook until the edges of the onions become caramelized.

  2. Add Veggies, Garlic and Worcestershire Cook for 5 minutes.

  3. Add Tomato Paste and stir until well incorporated.

  4. Add Bone Broth and Thyme. Allow the mixture to simmer for 10-15 minutes, allowing all of the flavors to come together. 

  5. You want your Meat Mix to have some moisture but not be soupy – place that in the bottom of a baking dish and top with mashed potatoes.

  6. Bake in the oven for 15 minutes and allow 10 minutes to rest. 

Helpful Tips and Tricks

  • The sky is truly the limit with a recipe like this. You can easily sub out any of the vegetables or spices to make a custom Pie. 

  • Some people also like to top their Shepherd’s Pie with Shredded Cheese.

  • It’s hard to spread cold mashed potatoes over something hot – keep your potatoes warm if they don’t finish up at the same time.
