Traditional Hot Wings

Facts

You don’t need a fryer to make delicious chicken wings! I bake them in the oven with my House-made Traditional Hot Wing Sauce. Chickens raised on pasture like the Freedom Rangers consume a diverse diet and move around lots while foraging for nutritious foods, making them superior in flavor and healthier meat.

Prep Time: 5 minutes

Cook Time: 1 Hour, 20 Minutes, Pre-heat the oven to 400 degrees Fahrenheit

Ingredients: 

2# Freedom Ranger Chicken Wings

1 Tablespoon Butter

1 Batch of Traditional Hot Wing Sauce

1 teaspoon Ground Chili Powder

1 teaspoon Onion Powder

½ teaspoon Salt

2 teaspoons Extra Virgin Olive Oil

Method: 

  1. Spread the Extra Virgin Olive Oil on the bottom of a cookie sheet to prevent the wings from sticking to the pan.

  2. In a bowl, mix the wings with Salt, Onion Powder and Chili Powder.

  3. Spread them out evenly on a cookie sheet and bake with the skin side down for 30 minutes. This will help to render the fat from the wings for a crispy skin. 

  4. Turn the oven up to 425 degrees Fahrenheit. 

  5. Using a spatula or tongs, flip the wings over and bake for an additional 30 minutes.

  6. Brush the Wings with a small amount of Wing Sauce and bake once more for the last 10 minutes. 

  7. On the Stovetop, heat up the remaining wing sauce. Add the butter at the end and stir until fully incorporated.

Helpful Tips and Notes:

  • Adding the butter in cold is a critical step you won’t want to miss. When butter melts, the solids separate. They are what turn brown when making browned butter, or what we skim when we clarify butter for ghee. We don’t want separated butter for this recipe, it could cause the wings to feel greasy. We want a velvety sauce, you will definitely notice a difference.
